This Avocado Pico De Gallo is one of my most recent creations and has become one of our favorite toppings!
There are SO many ways to use this tasty topping. It tastes incredible over grilled chicken, steak or shrimp! It also makes a great dip when served with grain free tortilla chips. You can also use it as a salad topping.

*Note: This recipe does contain lectins in the form of a red pepper. If you have any kind of joint pain, autoimmune condition or arthritis you should omit the red pepper. If you do no fall into this category, just be sure to peel and de-seed your red peppers to remove lectins. The lectins are concentrated in the seeds and peels. And lectins harm your gut. Not cool.
