Bacon, Egg, and Avocado Sandwich

  • 6large slices Organic, Hormone-Free Bacon
  • 4slices Gluten Free Bread
  • 3Tablespoons Chipotle mayo
  • 2large Organic Free-range Eggs
  • 1large Avocado
  • 1/4large Red Onionsliced thin
  • dash Hymalain Sea Saltto taste
  • dash Black pepperto taste
  • dash Garlic powderto taste
  • Handful Mixed Organic Lettuce Greens
  1. In a medium skillet, fry up your bacon slices until nice and crispy. Set aside. (Reserve a little bacon grease to fry the eggs later!)
  2. Toast all slices of bread until just slightly toasted.
  3. Scoop your avocado into a small bowl and mash with a fork until you get desired consistency. I prefer to keep it a little chunky. Add salt/pepper/ and garlic powder to taste.
  4. Slice your red onion and set aside.
  5. Lay out your slices of bread. Build your sandwich by spreading your desired chipotle mayo and avocado spread on all bread slices. Next add your desired amount of sliced red onion and bacon slices.
  6. In the same skillet as you cooked your bacon (with a little remaining bacon grease) fry up your eggs (one egg for each sandwich). We prefer to keep the yolks runny.
  7. Place your fried egg atop your bacon slices and finally top with a little shredded lettuce.
  8. Serve immediately!
