I am SO excited to FINALLY have a gluten free, diary free, NUT FREE and GRAIN FREE cookie recipe that actually tastes incredible!
Gluten free cookie recipes are all over the internet and gluten free cookies are supplied in nearly every grocery store, nowadays. Which is great because gluten is NOT good for your gut. At all. However, it’s REALLY a challenge to find a grain free cookie that isn’t made with nuts.
I currently have a nut intolerance to tree nuts (after overdoing almonds when pregnant with my son a few years back). Although I’m hoping to introduce nuts slowly back into my diet as my gut is much healthier than it was, I know the pain of NOT being able to eat nuts. Yet we ALL need to be able to enjoy the gift of a warm, soft chocolate chip cookie, regardless of your dietary restrictions.
So, if you have a nut intolerance or allergy, I feel ya. It’s tough.
The good news is, the recipe it basically safe and guilt free for anyone! So whip yourself up a batch right now and enjoy!
TIP: To store cookies, place in a freezer bag and freeze. Before serving, thaw cookies from freezer and be sure to warm on a baking sheet in a 350 degree oven for about 7-10 minutes. Enjoy!
