We LOOOOOOVE Mexican food around our house. We are simply obsessed with all the flavors, colors, and toppings that come along for the ride with this cuisine.
Honestly, my husband and I could eat something Mexican multiple times a week for dinner. We would never get sick of it. However, it’s quite the challenge for us being residents of upstate New York. There aren’t any great Mexican restaurants around here.
The solution??? We just make it ourselves. 🙂

Guacamole!!!!!!!
I have been making guacamole for many years now. Yet, I never actually created and nailed down a specific recipe that I was pleased with… until this summer. I knew the general idea of what I wanted. After much tweaking and taste testing I finally have a recipe I’m proud of.
It’s nothing fancy, just a quick and simple guacamole recipe that can be used for anything! From topping off your tacos to being a hit at your next party…you name it!

- 2 large Avocado ripened
- 1/4 cup Red Onion diced Avoid if you are one of our Gut Health Educational Courses
- 3 Tablespoons Organic Cilantro Chopped
- 1-2 Large garlic cloves Avoid if you are one of our Gut Health Educational Courses
- Dash Sea Salt
- 1/2 Large Lime OR Lemon

- In a medium bowl, scoop avocado meat (remove seeds first) and mash with a fork until desired guacamole consistency is reached.
- Add all chopped and minced veggies and seasonings. Squeeze your half of a fresh lime and mix everything well.
- Serve!
