Crispy Baked Sweet Potato Fries

I LOOOOOOVE sweet potato fries!  I love dipping them in garlic aioli, chipotle mayo, or all by themselves!  They are the perfect side to almost any meal and, if cooked in healthy oil, are super healthy for you!

Although I can’t remember the first time I had them, my most vivid memory was when I was a sophomore at Ithaca College.   If you are by any chance familiar with Ithaca, NY you will know where I’m going with this.  Settled amidst boulders and gorges, this small little hippy town is a hotspot for health food and local agriculture.

Therefore, as you can guess, the college cafeterias (yes, there were actually three) did surprisingly offer some healthy dining options.  It was halfway through my sophomore year in college that I decided to eat vegan.  (You can read more here.)  That was when I really made friends with those sweet fries.

I would eat them with almost every meal.  They were SO GOOD!  I couldn’t seem to get enough of them!  At the time it didn’t occur to me that they were not fried in the healthiest oils.  Fast forward a few years and here I am, in love with coconut oil.

Naturally, that is the oil I have chosen for this recipe.  I find that the sightly sweet flavor works great with sweet potatoes.  For a savory element, I add a few cloves of fresh chopped garlic which toasts up nicely alongside the baked fries.  Upon serving, we love to dip these fries into garlic or chipotle mayo.  Check out my easy recipe HERE!

Ingredients
  • 2 lbs. Sweet Potatoes
  • 3 heaping Tablespoons Organic Coconut Oil melted
  • 1/2-3/4 teaspoon Himalayan Pink Sea Salt
  • 1/2 teaspoon Garlic powder
  • 5 large garlic cloves minced

  • 2 lbs. Sweet Potatoes
  • 3 heaping Tablespoons Organic Coconut Oil melted
  • 1/2-3/4 teaspoon Himalayan Pink Sea Salt
  • 1/2 teaspoon Garlic powder
  • 5 large garlic cloves minced

Instructions
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Clean your sweet potatoes by scrubbing with a vegetable brush.
  3. On a large cutting board, cut off both ends of the sweet potato. Cut sweet potato in half and slice it length wise into 1/4 inch slices. Now cut each slice into 1/4 inch French fry strips
  4. Add all your uncooked potato fries into a large bowl
  5. Add your melted coconut oil, salt and garlic powder and mix together well until all the fries are coated in the oil and spices.
  6. Spread fries onto cookie sheets in an even layer. Place in the center of your oven and bake for 40 minutes, adding garlic half-way during the bake time (See next step).
  7. While fries are baking, mince your garlic cloves and set aside. After fries have baked for 20 minutes, sprinkle minced garlic evenly over fries. Bake for another 20 minutes or until desired crispiness in achieved.
  8. Serve immediately!
