Easy Tex-Mex Chicken is a classic protein main dish that you can make as fancy or as simple as you wish. You can top it with all goodies: Cheese ( we do dairy free or goat cheddar ), Guacamole, Cilantro, Lime juice, shredded lettuce etc etc. Or you could keep it simple and just serve with a side of veggies.
You can also shred the chicken for chicken tacos (on grain free tortillas) or serve on a bed of greens and make a BIG taco salad.
