Greek Chicken Salad with Lemon Tahini Dressing*

greek-saladThis salad is DIVINE!!!!  Ii is loaded with veggies, healthy fats, protein and topped with most addictive salad dressing!  My son loves this dressing on just about anything.  So all in all, this recipe is one of our favorites!

This recipe is dairy free as I can’t tolerate most dairy products.  However, feel free to add some healthy goat feta if you so desire!

*Note:  This recipe does contain lectins in the form of tomatoes. If you are on any of our Gut Health Educational Courses and/or have any kind of joint pain, autoimmune condition or arthritis I would recommend that should omit the red tomatoes and cucumbers.

Salad
  • 8 ounces Organic Pastured Chicken breasts or thighs
  • 1/2 teaspoon Organic Garlic Power *Avoid if you are on one of our Gut Healing Programs ( Healing IBS etc) 
  • 1/4-1/2 teaspoon Organic Black Pepper
  • 1/2 teaspoon Himalayan Pink Sea Salt
  • 1 teaspoon Organic Oregano
  • 1/2 teaspoon Organic Parsley
  • About 4 cups Organic Mixed Greens We love Red and Green Leaf Lettuce
  • 1/2 cup Red Onion sliced thin -*Avoid if you are on one of our Gut Healing Programs ( Healing IBS etc) 
  • 1 large Organic cucumber Peel and deseed -*Avoid if you are on one of our Gut Healing Programs ( Healing IBS etc) 
  • 1 - 1 1/2 cups Organic Cherry Tomatoes Avoid on Gut Healing Protocols
  • 1 Tablespoon Organic Fresh Parsley leaves topping
  • 1 large Avocado
Lemon Tahini Dressing
  • 1/2 cup Organic Tahini
  • 1 teaspoon Organic Gluten Free Coconut Aminos or Coconut Aminos
  • 2 large organic lemons Juiced, seeds removed
  • 1/4 cup Extra Virgin Olive Oil
  • 1 Tabelspoon Extra Virgin Olive Oil
  • 3 Tablespoons Srping Water
  • 1 Tablespoon Raw Apple Cider Vinegar Unpasturized
  • 1 large Fresh Garlic clove minced -*Avoid if you are on one of our Gut Healing Programs ( Healing IBS etc)

Lemon Tahini Dressing
  • 1/2 cup Organic Tahini

Instructions
  1. Preheat your oven to 375 degrees F.
  2. Place your chicken breasts/thighs on a baking sheet and top with all the spices and seasonings listed above.
  3. Bake for about 40 minutes or until juices run clear.
  4. Remove chicken from oven and set aside to cool. Once cooled, chop chicken into bite size pieces.
  5. Chop all the veggies. Build your salad starting with the lettuce first and adding all the veggies, one by one. Top with the fresh parsley leaves.
  6. To make the dressing, combine all the dressing ingredients in a 2 cup measuring cup. Whisk everything together well until creamy. (Note: Keep whisking until the dressing is smooth. It may take a minute or 2.)
  7. Drizzle dressing over the salad and serve immediately!
  8. Enjoy!
