This recipe is one of our favorites for a weeknight dinner. It’s so savory and bursting with flavor and spice.
It’s completely gluten free, grain free, and dairy free. And it’s loaded with essential vitamins nutrients. All the spices on the curried cauliflower are SO healthy for you!
First, you roast the cauliflower coated with delicious, savory spices. Then, while the cauliflower is roasting, you sauté the kale with garlic and onions. Once the cauliflower is roasted to perfection, evenly divide the kale into 4 bowls and top with the roasted cauliflower. I love to top the bowls with chopped avocado and fresh cilantro.
