This easy lemony herb crusted baked chicken has become an instant family favorite as of late. We have at least once a week served with a side of quinoa, sauteed greens (usually kale) and fermented veggies (gotta boost that good gut flora!).
It’s a spin off of one of my mom’s creations that she would throw together during the cold winter months. I absolutely LOVED it and would always ask her to make it again and again. She never had a recipe for it so this is my rendition.
I’m a big fan of herbs as you will soon discover. This recipe seems very French to me. I don’t quite know why. I always picture it being served in some little rustic French cottage settled amongst the fields of the beautiful French countryside. Okay…sorry….I get a little dreamy with my food and imagery.
Anyhow, this recipe is super easy and fast to throw together on a busy weeknight. I’m always trying to create quick easy healthy dinner recipes as we are a busy little family. Yet, I won’t sacrifice quality and nutrition. This recipe achieves it all!
