Due to the fact that 80 percent of our plate for lunch and dinner consists of greens, it’s safe to say we eat a TON of salad. All day, every day!
That means that the same ol’ salad dressing gets pretty mundane after a while. Right? I mean, salad dressing is what largely MAKES or breaks a salad.
So, I always try to keep rotating dressings recipes as well as create new recipes to add to our ‘repertoire’ in order to keep things exciting at meal time.
That being said, this particular Italian Dressing has been a long time classic around our house and in my home when I was growing up.
I do need to clarify something before I go any further… my mom was not Italian. In fact, I don’t have any Italians in my family. However, my mom’s Aunt Linda married into a large Italian family. Thankfully, my mom gleaned much from them when she lived with her Aunt for a time in California.
That being said, this was my mom’s personal creation. (With just a teeny health modifications on my part…ie. the sugar was omitted for Stevia and the Balsamic vinegar was swapped out for gut healthy Apple Cider Vinegar.) I think it’s spectacular! And so has anyone that has ever tried to when dining with us.
