These cookies are THE BOMB! Seriously, you take one bite and you are hooked!
My inspiration for these cookies are the traditional No-bake Chocolate Oatmeal Peanut Butter Cookies I’ve savored for so many years of my life.
The problem is…I can’t have them anymore as I prefer to stay grain and peanut butter free. Peanut Butter often contains molds such as aflatoxins which are NOT good for your health, to say the least. Oatmeal can also cause inflammatory responses in your body as they can also harbor molds as well as be cross contaminated by gluten. Yuck.
So, my No-Bake Macadamia Nut cookies are the Healthy version of this old-time classic. My ingredients are completely gluten free, grain free, dairy free, sugar free, egg free, AND vegan. Phew! That’s a LOT of ‘frees’. Also, they are very low carb and are loaded with healthy, nourishing fats so they work great for a keto diet.

- 2 cups Raw Unsalted Macadamia Nuts OR Raw Unsalted Pecans *I prefer pecans
- 1 cup Organic Coconut Chips
- 2 Tablespoons Raw Organic Cacao Powder
- 3 Tablespoons Organic Coconut Flour
- 1 teaspoon Stevia Powder
- 1/2 teaspoon Pink Hymalayan Sea Salt
- 2 Tabelspoons Extra Virgin Organic Coconut Oil *ONLY if making with pecans

- Pour your 2 cups of raw macadamia nuts OR raw pecans into a food processor. Blend until the nuts turn into a creamy butter.
- Add coconut chips to the processor and pulse a 4-5 times or until the chips get broken up a bit.
- Scoop your Macadamia Nut Butter into a medium size mixing bowl. Add the rest of your ingredients (IF using pecans, add in the coconut oil now. DO NOT ADD COCONUT OIL if making with macadamia nuts!) Stir everything until well combined.
- Line a cookie sheet with parchment paper. Then drop cookie dough by heaping Tablespoons onto cookie sheet, making 12 cookies. (OR you can scoop a golf ball size amount of dough, then roll into a ball, then gently flatten onto parchment paper into a normal cookie shape).
- Freeze for a minimum of 20 minutes before serving. Then, store cookies in the refrigerator until ready to serve. Enjoy!
