Ingredients
  • 3large Pastured Organic Eggs
  • 1/4cup Extra Virgin Coconut Oil
  • 1/2cup Dairy Free Unsweetene Coconut Milk
  • 3Tablespoons Dairy Free Unsweetened Coconut Milk
  • 1teaspoon Organic Vanilla Extract
  • 1/2teaspoon Pink Hymalayan Sea Salt
  • 2 1/2cups Organic Cassava Flour
  • 4teaspoons Organic Stevia Powder
  • 1teaspoon Aluminum-Free Baking SodaNon GMO
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Beat eggs for about 2 minutes. Add the Coconut Oil, Vanilla, and Stevia and beat for another 2 minutes.
  3. Mix all dry ingredients in a separate bowl and add in 1/2 cup increments, alternating with the coconut milk. (1/2 a cup of dry ingredients, mix on medium speed, then 1/2 a cup of coconut milk, mix on medium speed). Do this until all the milk and dry ingredients are mixed and a dough forms. (Add a little more cassava flour if dough is too wet or more milk if the dough is too dry)
  4. On a greased cookie sheet (greased with coconut oil), form cookie dough into golf ball sized cookies, and then slight press down to flatten the cookie.
  5. Bake for about 15 minutes or until cookie beings to slight brown. Remove from oven and cool for about 5 minutes.
  6. Cool Completely and frost with your favorite frosting!
  7. TIP:  To store cookies, place in a freezer bag and freeze.  Before serving, thaw cookies from freezer and be  sure to warm on a baking sheet in a 350 degree oven for about 7-10 minutes. Enjoy!
