It is currently the dead of winter here in upstate New York. The snowfall has been record breaking. Back breaking for those who have to shovel. And when it gets this blustery outside, the only thing I actually want to do is whip up some warm chocolate chip pumpkin cookies, eat them while they are hot accompanied with a steaming cup of chia tea. All while snuggled up on the couch with a warm blanket.
This warm cozy scenario might seem a little over the top crazy to you if you live in a balmy climate like Florida. However, if you have ever visited New York or Siberia or the North Pole as they all are pretty similar, you are all too familiar with feeling ‘chilled-to-the-bone’.
That’s why this easy pumpkin spice cookies recipe is my favorite right now! These cookies are warm, soft and chewy with the perfect hint of cinnamon and spice that will warm you right up! I LOVE adding chocolate chips to mine as everything is better with a little chocolate in my opinion. hehe However, the chocolate is optional as they taste just amazing without it. Totally up to you!
These delicious cookies are gluten free, dairy free, nut free and even grain free. So they fit the bill if you are paleo and/or grain free and can easily be made vegan if you use an egg replacement for the 3 eggs.
How are these good for your gut health? Well, they ARE a treat so you shouldn’t be eating these all day every day. Although I do recommend healthier options such as coconut sugar or honey, it still contains sugar and so should be eaten in moderation and for an occasional treat. That being said, I use arrowroot flour (or you can use tapioca flour as they are very similar) and coconut flour which are grain free and non-irritating to your gut lining! So, you don’t have to worry about gut irritants in this recipe!
