This is one of our favorite recipes for Saturday brunch. Our typical Saturday involves waking up around 6 am, doing yoga, a light breakfast, going to our local farmer’s market to get our eggs and veggies for the week, more errands….and then, BRUNCH!!!!!
Yes, we are ravenous by the time we get home. This skillet is one of our absolute favorite healthy gluten free breakfast recipes. It’s super easy to throw together and is delish!
Although I usually use sausage, you could use any meat you wish. Bacon, ham steak…whatever your heart or should I say tastebuds desire! The seasoning measurements are fairly modest in my recipe below. However, I make it a bit spicier for us. Feel free to adjust to your liking!
When it’s time to serve, this skillet tastes amazing with a generous side of sauerkraut and topped with a drizzle of Franks Red Hot sauce. Again, we like it bit of a kick as you can tell.
