I am a BIG fan of Chai tea. In fact, I’m kind of obsessed with it.
I’m also a BIG fan of pudding. Although I love chocolate and vanilla, my favorite has always been tapioca. When I changed my diet and eliminated dairy a few years ago, I was devastated that I could no longer enjoy those little Tapioca puddings you can buy pre-made in the grocery store. Of course, there’s a lot more terrible ingredients in them than JUST dairy.
Then I discovered Chia Pudding! I fell in love at first bite! The little soaked chia seeds reminded me of my beloved tapioca pudding and I have been a big fan of it ever since! You can make all different versions of chia pudding. The possibilities are truly endless.
For this recipe, I decided to make a Vanilla Chai flavor. I use about 1/3 cup of cooled brewed chai tea along with Vanilla flavored coconut milk (unsweetened). For a sweetener, I use a little less than 1/4 teaspoon of Stevia.
Stevia is a great sweetener option if you have a candida overgrowth and are trying to get your body back into balance. Right now, stevia is the ONLY sweetener I am using. However, if your body is in balance, feel free to substitute with honey or maple syrup to taste.
